Which one would be give more performance and is a better bang for the buck. The R7-240 will only get a dual core CPU while the APU has 4 cores.

Depends on which Dual-Core CPU you pair with the 240. Although, really, I would take the easier upgradability path and just get a dedicated GPU anyway.
