Should I get the 780 now or wait until the new 800 series comes out? I've heard that the 800 series will be faster and cheaper. Thanks for the help!
The gtx 8xx series is rumoured to be out in Q1 2015, but that might change. Now whether its worth waiting or not is upto you.

the difference between 5xx and 6xx is also similar http://gpuboss.com/gpus/GeForce-GTX-680-vs-GeForce-GTX-580 so you can indeed expect a 30-40% increase in performance with the maxwell gpus, however as said before this is pure speculation based on previous generation cards. Now its upto you to decide how long you can wait for the maxwell gpu to come out to gain a 30-40% increase (possibly even more) in performance

same scenario here as well regarding real-world game performance (for bioshock infinite atleast)
EDIT: Nvidia has also announced that maxwell will be based on a 16nm architechture rather than a 20nm, that is a big jump and performance increase will is also likely to increase by about 50-60% from current-gen 7xx cards
So, in conclusion, and will all that in mind, the 8xx cards will likely experience a power consumption reduction and performance increase of about 60% and possibly more, nvidia's future looks all bright and dandy right now, but its upto you to decide if you want to wait or not
Buy now wait till 800 prices drop. They'll be expensive out of the gate nvidia is known for price gouging but they'll come down once the first waves go out and sales equalize.
