How do I make a file type NOT open with a default program??!

Solution

If you want the file to not open at all then you're going to need to edit the registry.

Type regedit in the Start Menu search bar then find the registry entry for this file type and delete it. Be careful to backup your registry as it's really easy to mess up the registry there.

Worked!! Thanks. For some reason when I double click a .7z it regenerates the data in the registry and when I double click the .7z it flashes a cmd for a millisecond and then does nothing. But yea.. Its not a prob though because thats not how you use .7z. Mybe ill figure out how to make it not regenerate the files in registry. But it worked perfactly for the .esp and .esm. And ill give you best solution.
