Samsung 850 Pro's in Raid 0 OR Plextor M6e for me ?

My first build is taking shape ! ..but again I'm finding myself wondering which SSD solution I should go for...

Two SataIII Samsung 850 Pro in an Intel Raid 0 array ( 2x 128GB ) or one PCIe x2 Plextor M6e ( 1x 256GB, connected through M.2 x2 ) - both are about the same price ( a little more for the 850's )

I'll be primarily gaming ( SLI, 4K display ), running virtual machines, and doing a bit of video editing and of benchmarking. I will also be using a RAM disk ( 2x 8GB total RAM in the system ) and I will have a partition on my HDD with Linux on it.
Board is a Z97 Asus ROG board, and CPU is a 4670K. The SSD volume will host Windows 8.1 Pro 64-bit, my programs and my games too.


So, a single 128GB 850 Pro does 563MB/s read - 472MB/s write ( ATTO ) 43MB/s 4k read - 162MB/s 4k write ( CrystalDiskMark ) 96k read IOPS - 82k write IOPS ( AS SSD )

Then the 256GB Plextor M6e does 738MB/s read - 583MB/s write ( ATTO ) 33MB/s 4k read - 85MB/s 4k write ( CrystalDiskMark ) 89k read IOPS - 67k write IOPS ( AS SSD )


Now if two 850 Pro's are raided, the numbers will obviously grow even bigger and in that the Raid 0 solution would be superior to a single M6e.
But.. my knowledge about all that is little... Even with the numbers difference, I'd better go with the PCIe 2.0 x2 interface ? less latencies overall so better performance for my usage ? And Windows 8.1.. would it react better to the Plextor M6e ? and run best on it ?

I'm sure I'm not the only guy who wants to know what would be better for him between those two same solutions x)

What would you do ?
