For minecraft, you don't need much, but for virtualization, you need to invest in a good/compatible processor.
Intel Intel Xeon E3-1220V3 Haswell 3.1GHz LGA 1150 would be a nice pick. $230

Aim for 16 or 32 gigs of ram, the brand/mode doesn't matterl. 16 Gigs will be a good amount for 5 to 6 virtual computers :
Kingston 16GB (2 x 8GB) 240-Pin DDR3 SDRAM ECC Unbuffered DDR3 1333 Server Memory $230

Depending if you want a blade server or a tower server, you can choose a regular or server motherboard.
Server Mobo : SUPERMICRO MBD-X10SAE-O ATX Server Motherboard LGA 1150 $240

Regular Mobo :
GIGABYTE GA-Z97X-UD5H LGA 1150 Intel Z97 HDMI SATA 6Gb/s USB 3.0 ATX Intel Motherboard
(this one is great, it has 2 lan ports for interesting stuff if you want to make it a Firewall or whatever) but it might require drivers that linux might not support.

The case doesn't matter at all, jsut amke sure it support ATX motherboards like this one : http://www.newegg.ca/Product/Product.aspx?Item=N82E1681... $100

As for he PSU, also depends on the case you will choose (You will either need a TFX or ATX PSU, you only need something around 300 watts : SeaSonic SS-300ET Bronze 300W ATX12V V2.3 80 PLUS BRONZE $30

So yeah that's definetly under 800 euros (it sums up to $830), so you can buy legitimate copies of the software you will need ;)
