Which ITX Motoboard and Ram should I buy to complete this rig and hopefully sell everything?

I don't really understand your build in general, seems like there's some very odd choices in there. Some depend on what you actually want to do with it, others are just a little nonsensical (750W PSU and two things which kinda require a 5.25" bay etc).

For memory, it really doesn't matter, get whatever is good value when/where you come to buy. It's not the type of thing where spending extra money is worth it as memory is more or less the same. That said you ideally want a dual channel kit (presumably 2*4Gb or 2*8Gb if you need it) of 1.5V, at a speed of 1600 or greater (you can go as high as you like but it's not worth it if it's super expensive) with a lower CAS latency.

For motherboards there's a decent selection of Z87s and Z97s...

For motherboards there's a decent selection of Z87s and Z97s which will do the trick. If you intend to stick with the Zalman cooler and Prodigy case, you can more or less pick any of them, as these components are pretty flexible.
If you are in the US the ASRock Z87E-iTX is on an offer right now so is an absolute steal. Even if you aren't, the Z87/Z97 ASRock boards are usually very competitively priced and well featured. The Asus Z87I-Deluxe and Z97I-Plus are certainly worth a look but are usually a bit more expensive. If you have money to burn the Maximus Impact is pretty awesome, but it's hard to ignore it's over double the price of some of its competition.

I want to build a huge pc around 3500$ with two gpu and two Kraken G10 coolers with each pc part compatible with my 4K TV I bought too much deals and I changed my mind often. I need to sell some parts to get some cash. The fisrt thing I bought two year ago was an orange Bitfenix Prodigy case. The Blu-ray writer and the fan controller are not a problem I saw on Youtube someone who did a hole in the bottom and put the fan controller right there.
