I am sure about bio-shock, but the others are all doable. Its extremely demanding (even more pixels than UDH) so most modern will not be playable at that resolution.
Are you not sure about bio-shock or, are you sure?.

True, but we are talking about 3x more pixels, so I would say its unlikely that you will be able to.
Im not talking about playing on ultra with 3 1440p screens, I've seen a benchmark of bio-shock on 3x1440p monitors with 2 Gtx 780's in ultra, with a avg of 56fps low of 49 and high of 78. soo im hoping that 1 gtx 780 can run bio-shock at Med-high setting at 30+ fps on 7680x1440p
It sounds like you have done your homework. If what you say is true I think your expectations are reasonable. Honestly my bigger concern would be getting older games like KOTR to play nice at that resolution, you will be asking it to output in an aspect ratio and resolution that I'm sure wasn't natively supported on release. Might get a stretched or otherwise distorted image (it was an original XBOX release)
You will probably want to go SLI if you want to play more modern games (infinite is particularly well optimized if my memory serves) at higher quality settings. (could just fall back onto 5700x1080 though with the single card).
I'd go for it, that sounds fun as hell.
