What would be better for a Pentium G620? I'm torn between HD 6790 and HD 7790? Thanks in advance.

Similar performance but the 7790 is a newer architecture so I would go with that.

sorry, i'm quite new, but bottleneck means that the gpu power is more than the cpu could give right?

No, a bottleneck is the part of any system that slows down the throughput of data, in this case the CPU should be more than capable as the 7790 is not a very powerful card and thus it would not overwhelm any CPU with the amount or speed of data that it could handle.
