PC Random Restarts

Lately my pc has been doing this weird thing. It would restart without notice and quit me out of gaming or working. No later than a month ago I got a new Corsair power supply which is 750 watts. Maybe about a week ago I also got my new GPU. Which is when I saw this happening BUT I haven't started any heavy gaming until I got my new GPU so it is very confusing. I have tried restoring my BIOS, turned the windows restart feature off, and even looked at my audio and video drivers to keep them up to date. Its very upsetting. I get perfectly normal temps as well. For instance on my CPU I get around 40 degrees idle and about 55-60 degrees under heavy load like gaming. My GPU goes up to 70-82 degrees when gaming and the minute I close out the GPU drops down to 35-50 degrees which is perfectly normal. I checked my event viewer and found out I was getting a Kernel Power Error 41. I am really doubting that there is something wrong with my GPU or PSU because both are working fine and as they should be. As well for my CPU.

AMD FX 6300 at 3.5 ghz (Not overclocked)

EVGA GTX 760 2gb with ACX Cooling (Also not overclocked)

Gigabyte GA-78LMT-USB3 Motherboard

Corsair CX750M 750 WATT PSU

8GB DDR3 Ram

1 TB HDD

Your indeed right I did upgrade from a Radeon to a Nvidia. I also removed everything from the control panel like as you said the catalyst control installer and anything I could find that had to do with that stuff. I also looked in my device manager and went under the category "Display Adapters" but still only saw my Nvidia there and nothing else besides it like amd or ati. Any other places it would be hiding under Device Manager? Or am I just looking in the wrong place?
