As title says will it be safe to OC my i5 2500K from 3.3Ghz base to 4.0 with a 500W PSU? I just bought a Corsair H60 water cooling fan for my CPU.

Your power supply isn't particularly a good quality unit.
Probably better to get a newer power supply. Get at least 42 AMps on the 12V rails.

And one last question what PSU with longevity would you recommend? I was looking at the Corsair HX750W is it any good?

Just asking, i have a chieftec a-80 750w psu, its rated @ +85% efficiency with 230v
