New build, Gaming and Photoshop/Lightroom

OK so, long story short:
- I moved from Canada back to Australia so sold my i7 2600k, GTX 570, ssd & 3 HDD PC, and got $1300 for it (3 yrs old)

I now need to build a new one and I want to keep within the $1600-1700 budget.

I ALREADY OWN in Australia:
- Silverstone Strider 750W
- Case (Full ATX Coolermaster)
- 27" Monitor
- 2 x 1TB Hdds
- 2 x 2TB green WD

This PC will primarily be used for photoediting and storage as well as downloads and connecting to my media server. I do play SC2 and Hon and the new heroes of the storm, but no WoW or BF or anything (and i never will)
I will be overclocking it but not hardcore... really just to get the most out of the processor.

Reasons for choices:
cpu: I really wanted to get the i7 but in reality I dont do video editing anymore so prob could save the cash for a second monitor
GPU: Dont know if i should wait for 800 series.. but i really like nvidia and the 780 is a step up from the 570 :) - I wont be SLI'ing ever
SSD: obvious (120GB is too small for me)
mobo: Had the extreme 6 last pc and loved it, has lots of space for my extra hdds that Im going to use, looks good plus had some good results for OC


Still need to add:
- Keyboard (Gaming - sold my logitech 110) - Im thinking with an LCD but I don't really know which one. I do like logtech though...
- 2nd Monitor - will be running dual monitor
-2tb HDD (might not get right now)

Anyway if anyone can give me advice on the build/opinions that would be great. Im looking at ordering in the next week. Obviously I'm at 1400 right now but I still need that monitor and keyboard ($100 keyboard...$200 monitor??) - my home monitor is VERY good so I really only need the extra 1920HD monitor, but no fancy additions...
