Asus' turboV Evo Overclocking utility is actually pretty stable, I've used it in my early stages of overclocking. Achieved 4.8ghz on an FX-6100, stable.

Only thing I do recommend before doing so is to key in the voltages manually so they're not set to auto. That'll allow TurboV to change the voltages accordingly. That may also be the reason your system is not stable. TurboV is trying to change things it doesn't have access to yet.

There is a part of this video that shows you how to change your settings in the BIOS. It IS for an 8350, but with UEFI BIOS the sabertooth has, this will aid you.

Are you overcloking using some kind of software because if so, please don't do that.
Overclocking is done in the advanced settings of your BIOS by changing the multiplier of the CPU, not by using some kind of desktop application.

Are you using a desktop application to overclock the CPU? if so Yes, that is what is crashing it.
You should overclock in the BIOS and the BIOS only.
