Virtual server configuration

We are in the process of moving to virtual servers. We presently have 6 physical servers. One vendor has proposed moving to one physical with 6 virtual instances while another has proposed one physical with only two virtual instances combining server functions on the two virtual instances. Assuming the same physical hardware and software for these different scenarios, what would be the difference in performance, and would there be any advantage to one over the other?

Depends on the size of your business?
If you don't have very many services, it's easier to keep and maintain a backup of fewer servers.
However; having multiple servers (and pref. multiple DC's) allows for more fault tolerance.

There is no real disadvantage except the cost of new machines. A major advantage is much improved backup and recovery ability's.
As for performance, I have no idea what your running. But running everything in VM's is now almost standard practice due to the advantages.

I am in a similar situation with my company, and am looking to move my current servers, or recreate them on a VM box next year.
