SSD Storage Interface

Not in the far future I´d like to add my computer a SSD with atleast 256GB of capacity.
So i started thinking why do i have to use SATA III(6Gb/s) if my motherboard supports all those new generation fancy things like sata express and so on. So i found out my motherboard has M.2 PCIe connector and SATA express. Which interface should I use for maximum speed and features for my SSD? Or is there any more solutions? Or maybe I should stay with SATA III and not mess with these things? Maybe you could tell me the difference of those connectors. :) I know a lot about computers and I have my own custom built PC but those storage connectors have always been mystery for me(expect SATA of course).

For USAFRet: My motherboard is Gigabyte GA Z97X Gaming 3. Can it boot from M.2?
For k1114 : I would really like to have maximum speed. I already have one WD Black 1TB HDD and 256GB SSD is enough for my applications and OS. HDD would be for films, music, photos etc.

I know already about that page 11, that´s not problem. At the moment i am using SATA3 0 and 1 connectors and I can use 2 and 3 connoctors aswell before I have to use 4 and 5.
