Will a system restore undo a defrag?

Technically yes.
Because when you defrag a drive it is mapping and changing the structure of the data on the drive.
And as you know re ordering data so its not scattered but in one long block so the HD heads dont need to search and read as much.

A backup or system restore is an image of the OS at the time and where the data was mapped and written to it.
