Solution
If you're hosting servers and what not, the extra cores can come in handy. The i3 is around the same as the i5 in single thread performance. Hosting servers and what not, from my experience, will utilize a few more cores. It still depends on what you're hosting though I'd imagine.

It will be for in home file sharing, streaming video/audio, file backups, and the occasional game server for no more than 5 people.

eh you could try to see if a barebones one was cheaper but I doubt it will save you that much. to cut down on the costs do you really need 3.5TB of space? (I assume you're going raid) you could probably step down to 1.5-2TB range to shave off some cost.

I'm going to stick with that amount of storage because I actually have over 4 TB to store at the moment. But do you think I would be better off going with a name processor like the 6300/6350

I changed the CPU/MOBO/RAM and it did drop your price a bit..but nothing that significant. although the FX-6300 is better than the i3. You would need an aftermarket cooler tho. coolermaster hyperevo 212 would work.
