Need advice on GPU setup with specific requirements

So... I'm looking to buy a new computer in the near future (ideally within two or three weeks), and I want to design it myself, since I have very specific requirements.
(Bear in mind that I've never custom-built a PC before, so if I'm missing anything or you feel my information is incorrect, let me know.)

The only bottleneck (pun intended) at the moment is the graphics card. I'm not too experienced with the specifics of GPUs myself, so I'm not sure what I should do.

The key requirement for my choice of GPU is that is needs to be able to run two 3D applications in parallel. One of them is a real-time 3D game, while the other is (mostly) a lot less GPU intensive, but I would still prefer if it had the ability to get as much GPU power as the other application, since it's possible for it to suddenly require more of the GPU, and I don't want it slowing down the game at such a time.

In such a case, what would be better for me? A single ultra high-end GPU? Two graphics cards in SLI? (Yes, I've narrowed down my selection to NVIDIA, since I need ShadowPlay for hardware-based screen recording, which ATI does not have, AFAIK, but correct me if I'm wrong.) Or is there perhaps a better way?

You can pretend that my budget is infinite, since performance matters a lot more than money to me. Also, I don't need to be pointed at a specific graphics card; I just need to know what kind of setup (single GPU, double GPU, ...) would work best in my scenario.

So a single high-end GPU is better in this case then a dual-GPU setup?
In that case, why did you pick the 780Ti over the Titan? Does it have certain advantages over the Titan in my case?

The titan does not offer big enough upgrade to justify the cost (I assume this is why they said that its kinda the general consensus)

However it is false that AMD is incapable of hardware accelerated GVR.

I have never actually used the software however it is said that it competes directly with shadowplay which might allow you to consider both Nvidia and AMD offerings giving you the option to possibly get more bang for your buck.

Also considering that many sites have officially reviewed the 295x2 and claim that it is the most powerful GPU in the world (for now) it never hurts to have all information and consider all cards.

Having read that article about AMD's counterpart to ShadowPlay, it seems desktop capture is not yet supported, while this is the case with ShadowPlay. And since I don't want to record merely full-screen games, AMD is not currently what I need. So for now, I need what Nvidia has to offer.

I'll start looking into the 780 Ti, at least.
