Basically, I'm gonna be buying the NZXT Source 210 case for my PC build and with the 1 fan included I am gonna be buying 2 more. I am going to use 2 fans for intake at the front(with fan filters) and 1 fan for exhaust at the rear. I know that the air pressure will be positive and I want to ask is this a good airflow with the fan positioning? Or should i use 2 for intake and 2 for exhaust?

Also, is a Fan Controller needed for 3 case fans as I only have one header for a chassis fan on the MOBO I am going to be using? I can connect them directly to the PSU but some people say that running the fans at their highest speed isn't very good.

That's probably all I want to ask. Thanks in advance!

That's as good a fan combination as anything else. You won't really have positive pressure with that big top vent and side vent wide open. But that's fine. Pos pressure isn't necessary. Any excess heat that built up near the top of the case will escape out the top vents via thermal dynamics (heat rises). And the side vent will allow the gfx card to pull in plenty of fresh air.
