My new mouse has DPI settings from 100 to 3000 and when i try to change them it shows X Axis and Y Axis and i'm not sure what to do here. For example if I want 1000 dpi, do I just type 1000 in both X and Y axis text boxes? And i'm also wondering what is the standard DPI for 1920 x 1080 21,5 inch monitor.

strange, usually X and Y are united together but since they are separate on this occasion then yes you would just punch in 1000 in both x and y.
DPI doesn't apply to monitors, however it will help since if you have a 4k 28' monitor you don't want to constantly be on the edge of your table at low dpi.
