I was wondering if installing Ubuntu on my new PC build would be beneficial. I want to know if I would run into any problems trying to play the newest and highest caliber games out there.

Solution

Yes, unless you pick those which have native Linux releases (few beyond indie games, which I assume is not what you had in mind when you said "high calibre"), or those which are incredibly popular and not particularly new. The latter may still not work since you'll be relying on Windows compatibility layers. If you're interested in the latter, check out https://appdb.winehq.org/ for the software you plan to run.

The gaming scene on Linux has seen enormous strides in the last 18 months. It's still light years behind Windows. Your best bet is to dual boot the two OSs, or run Linux in a VM if you game way more than you do anything else.
Ubuntu may even play games better.. check the video for a clear example.. One thing I noticed a while back is that HQ videos played on Ubuntu looked better than Windows... I had read comments about it but verifying it for myself was surprising.. Games or videos it's all graphics so games should play well in Ubuntu.

Unfortunately, that answer is incorrect. A great number of the latest games just will not run under Ubuntu. If you are into games then stick with Windows.

Although there are much more linux compatible games now (many via Steam etc.) Windows is still better as gaming platform as all PC games have Windows release. Linux has other advantages. :)
