All are compatible. and none will bring a bottleneck.
i5 will be good for just plain gaming.
i7 will be good for gaming+streaming and other intensive stuff.
Xeon is basically a cheaper i7, but you loose the overclocking benefit of the K sku i7s.

I'll go with i5 for gaming, even over i7.
2 reasons:
$100 less than i7, I'd rather spend those on GPU. And
Easily OCable, to around 4.5 GHz, and almost no games use hyperthreading, barring few like BF4, so i7 is just like i5 clocked at the turbo speed.

Xeon actually are business level server CPUs which are highly stable and can run 24X7. You will never get any issues on its functioning. It uses a higher fabrication process than the i-Cores. The only thing it lacks is OC-ability as it is locked and iGPU. Otherwise its a very solid CPU.
