Would a 760 watt power supply be overkill for a system that is only using about 300 watts?
I'm planning on buying a second hand seasonic gold 760w psu for my system but it would be cheaper than any other new psu over 500watts.

No it is not. The system only pulls the power it needs.

I would NEVER buy a second hand PSU even if it is AMAZING quality, because the companies will not honor the warranty if something did (very unlikely) happen and your system was fried.
