Just received my GPU in the mail today and one of the specs it is recommended is Windows 7 or 8 - 64 bit. I was only planning on getting 32-bit. Should I go with the 64 bit Windows then? What is really the difference in regards to my GPU? Does it matter?

There is no reason to go for 32-bit nowadays. It doesn't really matter for your GPU since most games are 32-bit anyway. But in general, 64-bit is more future proof. All 32-bit applications work on 64-bit windows. But if there's a 64-bit application out there, you won't ever run it on a 32-bit windows.
