Dual channel RAM, 3GB VRAM should be fine, however you can snag the AMD 7990 on Amazon for 700$~ and it has 6GB VRAM, will play games flawlessly, and run you're design programs more efficiently.
Also, the wattage is enough on that PSU, but it isn't exactly a 'high-end' PSU, I'd spring for the AX760, a lot more efficient in power consumption

Seems like you have money and you building a BEAST! I just noticed instead of getting 1x8gb get 2x4gb as it works better like that and i might be really inaccurate on this, but i think 8gb for rendering might be low sometimes, i dont know.

Agree with proropke above, definitely go dual-channel, whether that's 2x4GB or 2x8GB is up to you and your needs. I would imagine going with 16 wouldn't hurt given your graphics work. The only other thought I would have would be investing in a 4GB VRAM card instead of 3, but I'm not sure how much of a factor VRAM is in rendering/design work.
