Motherboard: ASUS P8Z68-V PRO/GEN3 socket 1155 ( http://www.asus.com/Motherboards/P8Z68V_PRO/ )

Does that motherboard support 3gb video memory / gddr5?

Will it be able to optimize the graphics card 780Ti, or will I need a new motherboard

Also, should I upgrade my i7 2700k processor, or is that still good

Im using my pc for gaming.

Hang on to your 2700K! Your MB will run that 780ti GPU perfectly.

I have a 2500K oc'ed to 4.4ghz and although it doesnt make me breakfast in the morning, I'm not upgrading anytime soon.

I could run my Asus P7P55D-E Pro and still be fine. Maybe a drop like less then 5% performance. But I don't have to spend xtra money for a 5 or so % gain.
