agreed, crossfireX is more risky because some times you get really bad latency issues. r9 290 is better.

I'm pretty new to PC gaming, would it make a difference to up the ram to 16GB?

No, there would be no performance increase at all. 8GB of ram is fine.

Gaming no, video editing and rendering yes.

No game will normally use more than 2-3gb. your 8gb is plenty.

I agree that a single good card is better than dual cards. Dual cards may cause tearing or stuttering.
Your 750w psu can handle either cf 270 or up to a GTX780ti if you want.
Ignore specs as a selection criteria. What they are will be different per card and will work differently.
If you want one metric, buy the highest priced card you are willing to pay for.
You will get fair value at any price point. To see a significant difference, make it a biggish jump from the 270. I would think a GTX780 or R9-290 would be right. Much less, and you run the risk of being disappointed.

If you have some funds to spare, I suggest a SSD for the "C" drive.

You talking about one gpu in particular like a r9 290 and wanting to know which company to go with for that gpu?

The only thing that would increase performance is to look for overclock versions. other than that is a personal choice.

The Sapphire Tri-x and Vapor-x have the best cooling of the 290s and 290Xs.

I don't have a lot of room in the case I have a cooler master enforcer so I don't think the GPUs with three fans will fit

I have a method to pick between equally performing products.
Go to newegg and find the candidates.
Filter on the most reviews.
Then look at what percent of the reviews from verified buyers have one or two eggs indicating some sort of a problem.

Most of the high end R9 290x cards fare poorly when compared to the EVGA GTX770 or GTX780 cards.

I think I will go with an EVGA GTX 780

would it be safe to SLI it later on?

That would depend on the make and model of the psu 750w(even a good one) is pushing it. With 780s in sli I would recommend atleast a good 850w psu.
