So I'm not sure if this is even where this thread belongs but it seemed more to the point than most.

Basically I'm wondering if I could cannibalize a cellphone and use the antenna to connect to a Raspberry pie to receive/send data. I've been looking at some of the jet powered model planes which travel up to 320 MPH which means even a high end transmitters make it hard to get any good distance out of it. Was thinking if you hooked up a camera it could hop from tower to tower for a fair bit of range. I'm thinking a custom web interface would be the best option if it could be attached to the phone.

I'm just curious about it, I don't have 5k to spend on a jet engine to attach to a plane but just building the interface alone seems like an interesting project.

Why not just attach the phone to the plane? Phone has camera, phone has data, phone has recording. Or are you looking for a live view that is pushed? Even that is possible actually, get a streaming site account, install their app, and stream from the phone as it flies on the plane.
