Trying to make sense of existing wiring

I've moved into a home with pre-wired speakers and controls. There are unlabeled, non-terminated, coax wires coming down from the ceiling to the entertainment center.. There is some type of audio patch panel in the entertainment center. The single jack ports on the panel are labeled for speakers (Back left, back right, etc). There are two non-terminated CAT5 cables coming into the entertainment center from under the house labeled sub-woofer 1 and sub-woofer 2. There are simple volume controls installed in multiple rooms. There are ceiling speakers in the rooms. I'm looking for some guidance on how to make sense of things and get surround sound and whole house music set up.
