Water freezes at 0C and boils at 100C. You'd be dead if you slept a single night in a room that hot.

Spreading out the thermal paste yourself can cause air bubbles to get trapped underneath the heatsink and cause ineffective heat transferring. The pressure from the heatsink will spread it out so you don't have to.
