building a 2012 r2 server...

Ok specs:
either 2-Opteron 6320-or-1-6378, Tyan S8236GM3NR -or-ASUS KGPE-D16 SSI, 64 GB Memory, Supermicro CSE-835Q 3U rackmount server case with redundant 800W power supply, 4-WD black 2TB SATA drives (3 for RAID 5 config and one extra as hot-swap), WD or LaCie external 4 or 6 TB drive for full image of RAID, LG black Blu-ray reader/writer, Windows 2012 r2 server. Mainly running as a small business server with less than 50 users. Want the ability to scale to eventually bring exchnage in-house in next year or two, possibly host our own web server too. For now it will be replacing a worn-out DELL 2003 r2 server that is not even set up as anythign but anotehr CPU on the network. Minimal security, software firwall etc. I also have a Cisco 501 PIX box I am throwing in place as a better FW. What are the thoughts out there on this? Redundancy is needed plus decent on-site ack up. That is whay I am doing th eRAID 5 and then the external 4-6 TB drive. Also, important files leave via DVDRW with owner at the end of the day. Also, running enterprise quickbooks and Symantec server resident.
I am open to any thoughts/what am I missing.
oops, and add a WD SSD 240GB for boot/system
 
Take your 5 disks, and put 2 in a mirror for the OS, and put the other 3 in a raid 5 and only put data here. Take a regular backup of both the mirror and raid 5. Get a sixth drive put it on the shelf, for your spare. When you take backups, do them to several different external drives, and rotate them daily, and keep one set off site.
