RAM usage from nothing?

I have this weird (and probably common and not so weird to some of you:p) problem that after rather longer run of my PC i get very high RAM usage.

Probably better said, after my PC is on for more then 10 hours and i've been working the whole time, at the end i get 50% ram usage from basicly nothing.

So this is the usual problem: im using photoshop for work, where i have a few (3-4) canvases of 1920x6000px with more then 400 layers per file. After that i start drawing on 5000x7000px canvas (it variates, but the overal pixel count is the same). By that time i have 14.8GB ram usage avarage. After i close photoshop it drops to 8GB usage. When i check taskbar, the proccess using most ram is around 200MB. After PC restart, the same proceses are running and my ram usage is around 3.6GB. Meaning there is something that uses around 5GB of ram that is not listed and its removed after restart.

The problem is not terrible, because i can restart and it will work ok for the next few hours, even if i repoen the same files. (note - i am also running OBS and streaming for 3-4 hours). I did tried to restart stream, to see if this is the problem, but it the ram usage was still there.

Just to mention, im with 16GB RAM
Intel Core i7-3820 @ 3.60GHz on 64Bit Win 7 Ultimate

Working with photoshop, and most anything, even after you close a program, the system will often keep large files in DRAM...sort of just in case you go back to it, if the DRAM is needed for other it will either just drop it or write it to your page file
