Yes or no question: do I need to uninstall onboard graphics drivers before installing a new gpu just as I would with drivers for a gpu being switched out?

Yes, completely uninstall all GPU drivers. Then shut down the PC, put on the new GPU, and if your PC doesn't install drivers by its own, make sure to get the latest ones from the manufacturer's website.
