How much SSD for gaming?

I've heard that moving files to a new ssd is a pain in the neck when you run out of space. I never use max space on anything but I'm still afraid I might run out

I'm thinking about a 256GB SSD. My main questions are:

Is this enough for someone who plans to game and use a couple programs here and there?

And

What exactly do I put on the ssd besides my OS? I have a 1TB internal hdd. I don't know if I should put any games on there, if I should put programs like steam or origin or my engineering programs on my hdd or ssd. This seems like a bunch of space used up if I put my games and programs on my ssd. I'm just really confused and don't want to waste money here

I personally have a corsair GT 120GB SSD and how I have it worked is I have two of my most played games, portal 2 and war thunder and all my important and most used files and software on the SSD. Then I put my rarely played games like f1 2013, and other non important files on my 2nd HDD.

It works great for me.
