Hi, I will be hosting Minecraft servers and I am wondering what raid would you suggest? I have 3 HDD at 146GB a piece and I need speed as well as safe storage.

RAID 5 would be more tolerant than RAID 0 and should be fast enough for your use, as loss of one drive will not kill the array. With only 3 disks you don't have much other choice and assuming that you will run Windows you cannot use zfs raidz, which is a bit more sturdy although probably unnecessary with only three small drives.
