Seems like the better solution is to talk with your ex about why the hell he's trying to track your phone.

Agree with Mooz, I would address the main issue as everything you do to circumvent him tracking you will make him try harder to do so. Also what evidence do you have that he is tracking your phone? Turning the phone completely off or at least enabling airplane mode to cut all connectivity should do the trick.

Since it is your ex, you could, you know...get your own phone plan.

Go buy a prepaid phone that works with your sim card, Turn data on your phone off so its only costing you ~$10/month, visit your nearest truck stop and ask one of the nice gentlemen to drive your phone around the country for the next 3 weeks and then leave it someplace scenic.

In the meantime you can get your own phone on your own plan and get that ex out of your life once and for all, or until you call them again...

If you take the SIM out, then the phone won't work. So you'd be better to just turn it off. If he/she is the primary account holder, then they can track it otherwise. Switch your number to a new plan.
