Moving to an Intel platform will allow more upward mobility for future upgrades. But if you want to keep the FX-6300 for awhile yet, the gfx card will provide the best improvement in gaming. If you can do both, even better.

It depends somewhat on the games you play. MMOs (WoW, Guild Wars 2, Tera, Planetside 2, DayZ, etc), you'd actually see a bigger improvement switching to an Intel CPU than upgrading your graphics card.
Most other games, the graphics card will offer a much better upgrade.

Well, tbh Dishonored and Grid 2 should both be running ultra at 60 fps on your current PC.
Skyrim would slightly favor a CPU upgrade as it uses mostly 2 cores - The FX-6300 minimum framerate in Skyrim is supposed to be about 40 with an average of 80, while the HD 7870 is supposed to have a minimum of 60 fps and an average of 80. So your FX-6300 will be holding your HD 7870 back somewhat.
