How too RAID 1 w/ two 1 TB HDS or one SSD and two 1 TB HDS in RAID or???

Need some guidance. I am not a computer wiz but can follow directions and most time figure things out.
My computer case (Carbide Series 300R Mid-Tower ATX Gaming Computer Case) has space for 4 HD’s.
I want to set up a RAID 1 so that I will have a mirror of my data (Movies, data, music, T.V. shows, etc.). I was thinking of using one of the 1 TB drives as primary with the OS and use the other as the mirrors.
I have been reading a bit about SSD and using a SSD to load the OS only on.
Have also thought about using 2 smaller HD’s as a RAID 1 with the OS and the 1 TB HDs as a RAID 1 for my data and file.
Is that doable?
Suggestions on my best approach to do what I want?
MOBO: MSI Z97 PC Mate Socket LGA 1150 ATX Intel Motherboard
HD’s: WD Blue 3.5” 1TB
OS: Win 7

O.K. If I get a SSD will a 250GB be big enough. I am guessing that I should load all my programs on the SSD such as the OS, word, Outlook and the other programs I use?
