How to properly setup a SSD HDD for a standalone OS and store all other files on a 7200 HDD

So Im building a computer and bought a Samsung SSD 128GB HDD and two 1TB 7200RPM Barracudas. My goal is to have JUST Windows 8.1 on the 128SSD for quick bootups and then save all my music, photos, games onto the 7200RPM HDD's.

Im sure im not the first person to do this. Is there a youtube video on how to do this? My thought process is to leave the two 7200RPM Barracudas unplugged until after I finish all the installs and windows updates and then simply plug the two HDD's back in. Would that work? Or is it not that simple?
 
Umm, that simple.

You could get all fancy with RAID arrays and such for the HDDs, but really, install windows with just the SSD, then install the two Barracudas and go through the windows format drives thing, just don't format the SSD, windows will tell you what you need to know.

When you say windows format drives thing... what do you mean by that? Before or After I have the Barracudas plugged in?
