Another which GPU thread - multi monitor setup

I currently have 3 x 23 monitors that I use for gaming (5960 x 1028 or there abouts) and another 27" IPS monitor for photoshop work. Obviously don't use both functions at the same time but the card(s) should be able to support 4 monitors.

I'm running 2 x GTX680's (water-cooled) and I've notice that the VRAM is maxing out (certainly in gaming). I'm pretty sure I need one (or two?) GPU's with at least 4GB or even 6GB - mulling over the following -

-> GTX Titan 6GB (old style) - I can get 2 for £800 (about 1 year old) - go for one or two cards? Is the clock speed an issue with games (I don't believe it is)?

-> 290x 4GB - I'm a bit of a Nvidia fan (had lots of a eyefinity problems before converting to Nvidia, I kinda of assuming these are a thing of the past). Again one or 2 cards?

-> Nvidia 780Ti's - my concern is the 3GB VRAM, I'd rather play safe.

I'd put the R9 290X in 2-way CrossFire; It's stronger than the Titan and has more VRAM than the GTX 780Ti.
