I'm currently running two Radeon 6850s in Crossfire with a sandy bridge i5 2500k. What would be a solid upgrade to this setup in the $250 range and am I likely to be bottlenecked by my CPU?

If you wish to switch over that's your call. The 270x is a solid card. Comparable the 760 is also a great upgrade for you.

PhysX is amazing and in my opinion is worth switching for it alone. The card is a few dollars more than the 270x.
Both are comparable cards but the 760 take the 270x in almost all catagories
