I have one EVGA GTX 760 2GB at the moment, and use a 1360x768 32" TV as a display. It is very low resolution, and the 760 is kind of overkill at this point. If I were to pick up another 760 and a 2560x1440 monitor, would the 2GB of memory be enough?

The maximum resolution is determined by the both the GPU and its connection port used as well as what the monitor/tv supports.
the GTX 760 supports upto 4096x2160 on a digital port and upto 2048x1536 on VGA (analogue port)

So yes, if you upgraded to the stated monitor, your card will support 2560x1440

That's not what I'm asking. I'm asking if 2GB of video memory would be enough to play video games at 60fps at 2560x1440.

Not been below 4GB on 4k but I would expect atleast 3GB for 4k, 2GB is barely enough for latest games at 1080p,

Edit noticed SLI, so yes it will be enough

Might find this useful, not using sli

What does SLI have to do with it? Video memory doesn't stack, so I would still have 2GB.

Here's a bunch of charts from Guru3d.com. I left out Watch Dogs because that's just atypical.

Battlefield 4

Bioshock Infinite @ 2560x1600

Crysis 3

Far Cry 3

Shouldn't be a problem for sli 760s, as together they are stronger than a 780ti. The 2Gb may be a concern if you tried dual monitors, but for a single 1440p no worries.
