Yes it can handle 3 monitors
This card has 4 ports; HDMI, Display-port, DVI-I, DVI-D
As long as you can connect each of these to a port on your monitor/tv, you can handle up to 4 monitors

2GB would be sufficient for most situations and is fine in triple monitor gaming too but if you move to 4k resolution, you would want that 4GB
But if playing games like BF3 which push 2GB to the near limit on single monitor, 4GB would help a bit when moving to triple monitor, if the vram max's out you would notice slight drops in texture/rendering quality and slight fps drop, . But you would only really notice this when going past the 1080p resolution.
Would also help alot in future proofing
