I have (approx.) 600 dollars to spend on one, or multiple graphics cards.
What do you guys think will give me the best bang for my buck?
Two GTX 770's in SLI?
Or one AMD R9 290X?
Or any other suggestions?
Thanks.

If I was placed in your shoes and you also have a SLI or Crossfire build, I would get a 770 SLI or a single 780Ti. If you are into AMD GPU, try a 290 Crossfire.

Or you could wait for the 800 series and go with the 880 or wait longer for the 880Ti. If this is going to happen.

Depends on the rest of your system and your intended display resolution. A single fast GPU is almost always better than two slower GPU's. The same way as a Xeon will always perfom worse in games than an overclocked I5.

Processing power is better with more, but the software doesn't use it, therefore speed wins.

The fastest you could get for that money is 2 x 280x(HD 7990 pretty much) for less than $600, or 2 x GTX770 for about $650. Keep in mind that both these solutions are almost identical in performance in signal card and dual card configurations. Both solutions will Even be above a GTX780ti level of performance most of the time by a fair amount when xfire and/sli work properly. The 7990 in this review is the same as 2 x 280x since the card is two GPUs(2 x 7970ghz) and the 280x is a rebranded 7970ghz anyway. You want to get the fastest single card you can. Going with a two or more card setup eats a lot more power, creates a lot more heat which can run into temperature problems, and has the potential for driver issues and microstutter.

This being said, the EVGA GTX 780 SC w/ ACX http://www.amazon.com/gp/product/B00CUIVSNS would be your best option in that price range.

No good reason not to buy a 780 ti on sale.

There you go looks like you found best bang for the buck there outperforms 290x a touch and still in your budget and next step up will be well over it. :)
