Of your selections, I have heard nothing but good things about the Plantronics headset. You can enable 5.1 or 7.1 virtual surround if you feel it is necessary. I, personally, don't find virtual surround all that helpful in games, but other people seem to have different experiences.
As suggested above, you could also consider Logitech headsets. The G430 is a pretty good choice. It sounds pretty good for the price and still offers 7.1 virtual surround should you choose to use it.
To answer your question about driver size, you won't notice much of a difference. Generally speaking (very generally), you will hear more low end out of larger drivers. The larger the driver, the more air it can push. Bass needs more cone movement than mids and highs, so larger cones can help with this. On the headphone/headset level, this doesn't apply as much. I would not make this something that would prevent you from buying a headset or pair of headphones.
Just so you are aware, a pair of headphones (not a headset) will almost always sound better than a headset in its price range. If you don't need a microphone, then I would highly suggest looking into a pair of headphones instead. If you need a mic and don't want to deal with the mod-mic later on down the road, then getting a headset is definitely the way to go, especially if you aren't crazy picky about your sound.
