I'm about to purchase a pair of 850 Pros for a new workstation and plan on setting them up in RAID 1 for security purposes. It will be my main drive where I'll be installing the OS and my important softwares. What I'd like to know is will there be a noticeable performance degradation if set the SSDs up in RAID 1?

Nope, and their SSD's, whatever performance hit there would be is going to be negligible in the face their already ridiculous speeds.
