This is how I would build the system to deal with high-end gaming and editing. This is a beast of a system and nearly follows what I am currently building as I do just what you are looking to do. The biggest difference with my build and this is I run 2 SSD's in RAID 0 for my OS drive and use CaseLabs for my case as they are designed the way you need them.

Video Card: Asus Radeon R9 295X2 8GB Video Card ($1499.99 @ Amazon) <-- No need to SLI, this is the card that Microsoft and Asus used to show true 4k gaming, they used 2 of these and 3 30" $2000+ monitors at crazy ULTRA settings with no problems at all. But again the system cost $15000. This card will give you the ability to use 3+ monitors and run at the highest settings you could think of. Right now I run 2 1080p and 1 1440p (Media Monitor) at full tilt and no issues.

Operating System: Microsoft Windows 7 Ultimate SP1 (OEM) (64-bit) <-- I'm one of the odd ones that likes Win 8.1 Pro, been using it for a while, but Win 7 is good.
Monitor: Asus PB278Q 27.0" Monitor ($469.99 @ Amazon) <-- Start with this monitor, then just add on. This monitor is fantastic with media work and can handle gaming, you could grab another 1080p 27" for around 250 and run them both full tilt with the Vid Card.

This is rock solid machine that can handle just about anything to include workstation type of work. I run AutoDesk, Adobe Master Collection (now Creative Cloud), Softimage, 3dMax, Maya, and just about anything else I tinker with.
