1u psu for the newest gpu's

ATX Connector 24 (20+4) Pin x 1

SATA 15 Pin x 6

PCIE (6+2) Pin x 1

I know it has only one PCIE . Which would be better to get the 2nd PCIE from 2 sata or 2 molex cables?
I am going to make a low profile case and the height of a 1u psu is ideal for my project.
 
Depends on the GPU. You have a lot of watts, but the amps is kind of low. For example a system with a gtx 770 comes with a recommendation of 600W and 42A on the +12v rail. Both of the PSUs you are looking at carry 43A. So assuming those PSUs put out their stated numbers, it should barely be ok to power your system with that GPU. As you said, you will need a molex -> PCI-e adapter. Those are never recommended, but a guys gotta do what a guys gotta do, right?

I'm not saying it will work. I'm not saying it won't. That's a tough call in this case. It'll depend on which gpu you want to play with.

ok so the 2 psu's are not great. I have found another one which I would like your opinion on. It has more amps and more watts but the problem is that it does not have 8 pin pci-e connectors but 4 x 6 pin pci-e.
