I have two gpu's set-up for SLI, and I'm confused as to how my monitor is supposed to connect to them. Do I just pick one of them to connect to the monitor? Or do I need some kind of adapter to connect the two gpu's behind the case and then connect to the monitor?

You just plug it into the first card.
The way SLI works is the secondary card disables its outputs and simply computes data for the first.

Thanks for the info. Which card is considered "the first" exactly?

The top card typically is the first, unless the motherboard is inverted.
