Is RAID Setup Needed For Me?

I was planning on running RAID-5 on my home server, but I'm not so sure anymore and am wondering if it'd be best to just dedicate each drive to each specific thing. I plan on running 15 VMs or so, plex media server that will transcode, and backups set at specific intervals.

I'm thinking maybe 1 drive for boot/OS, 1 drive for VMs, 1 drive for Plex server and media files, and 1 drive for backups. I'm worried if I setup RAID-5, the constant read/write across all devices would bottle neck things.

Example: if a backup is running, it'll be copying it across all devices in RAID-5, rather than just 1, and if I'm currently transcoding a movie, it may affect the transcoding and data read speeds because it's writing simultaneously to the hard drives cause it's backing up my laptops -- I hope I'm explaining that correctly.

How should I go about my hard drive setup for my situation?
