Would it cause problems if i put the temp prob on my fan controller at the very edge of the top of my cpu and place the cpu water cooler block on top of it . If so how would i get a decent cpu temp reading for my water cooled cpu thnx.

Like im not talking about taping it in plac,e i'm just saying if i lay it down on the cpu's edge and sandwich the liquid cool block on top would that work ok ?

It would damage the integrity of the thermal paste, and it would create a hot spot.
The temperature reported by software is fairly accurate, and would likely be far more accurate than a probe lodged into the thermal paste.

I would stick it near the intakes, or the exhaust fans. This way you can tell the ambient temperatures of incoming air, or case air, which are usually the hardest to monitor.

Theres no real way to monitor component temps like the CPU or GPU with it.
